Peanut Butter Recipe using a Vitamix (or any high speed blender)
Ingredients:
- 2 cups of roasted peanuts
- Salt to taste (optional)
Instructions:
- Start by adding the roasted peanuts to the container of your Vitamix.
- Turn the machine on low speed and gradually increase the speed to high. Run the machine for about 1-2 minutes, or until the peanuts have been ground into a fine powder.
- Stop the machine and use a spatula to scrape down the sides of the container.
- Repeat this process for another 1-2 minutes, or until the mixture becomes smooth and creamy.
- If desired, add a pinch of salt to taste and blend for another 20-30 seconds.
- Store the peanut butter in an airtight container and refrigerate. It will last up to a month in the fridge.
Note: Roasted peanuts are already oiled, therefore no additional oil is needed. You can also use this recipe to make almond butter, cashew butter, or any other nut butter by replacing the peanuts with the nut of your choice. Other nuts may have lower oil content and a bit of oil may be needed to get the desired consistency.
